Even though I can't have dairy, every once in awhile I crave a creamy alfred0-like pasta sauce.
I say Alfredo-like because it is challenging to make something that's entire essence is dairy into a non-dairy recipe. Alfredo is defined as "with cream sauce: served with a rich sauce made from cream, butter, and Parmesan cheese."
This is the recipe I make at those times. You will like it even if you can eat dairy. It is a great option for those looking for a lighter calorie pasta topping.
I served it over Maninis Gluten Free Roasted Garlic Fettuccini. I am absolutely crazy about the Maninis Gluten Free pastas. When I rounded the corner at my local PCC and saw the package of fresh gluten free noodles I let out a little yelp.
I went home and cooked them for dinner and they are truly delicious! Another gluten free product that can hold up against any wheat pasta. Actually, I am pretty sure the Maninis pasta would win.
Recipe for Non-Dairy GF Creamy Pasta
Gluten Free Mom Recipes
Ingredients:
- 1 lb gluten free pasta
- 2 Tbsp Earth Balance or GF margarine
- 2 garlic cloves, minced
- 2 Tbsp gluten free flour
- 3/4 cup GF chicken or beef broth
- 3/4 cup non-dairy milk (almond, rice or soy works fine)
- 2 tsp parsley flakes
- salt and pepper, to taste
Directions:
Melt butter and add garlic in a medium sauce pan. Cook for 1 minute over medium heat.
Add flour and cook 1 minute, stirring constantly.
Stir in broth and non-dairy milk and cook, stirring frequently, until sauce boils and thickens.
Add parsley, salt and pepper to taste.
Toss hot pasta with sauce and serve immediately.
