Today I just want to say how happy I am to be gluten free!!
I have been trying to make the Gluten Free Kid a birthday cake and it has just not been working out.
I have made no fewer than a dozen cakes in the last couple of years, so I wanted to try something different from your standard vanilla and chocolate cake.
She loved the Red Velvet cupcakes at Babycakes in New York, so I thought a Red Velvet Cake would be fun.
In addition to being gluten free, I am dairy challenged as well and the first cake I tried turned out more like Red Velvet Pancakes.
Take II - I turned to one of my favorite Cookbooks and made Karen Robertson's Yellow Butter Cake with Chocolate Frosting.
Well, I am not feeling very well,
and my middle daughter has been home sick all week,
and I am not thinking straight and
Take II was a flop as well.
So I am out of time and options, but thankfully my kids are young enough that if I cover it up with enough frosting they will love it.
Anyway, I was feeling rather down and wondering why I did not just order a cake from DaVinci's, when I went to my computer and saw all of the wonderful emails from you - our Gluten Free friends.
And I just want to say how happy I am to be gluten free, because if I was not I would of missed out on this community of wonderful people.
The emails were about random things (New York, my website, suggested cake recipes).
Obviously no one knew the bad day I was having.
But they lifted my spirits~
in the way that only those who have also had bad gluten free baking experiences as well can lift your spirits.
They call it empathy, not sympathy.
So today I just wanted to say thank you for all of the emails you have sent to me and how happy I am to be gluten free!!!
