Sorry to have been out of touch for a while, but as the title implies I am not only Gluten Free but also a Mom, and it has been Christmas . . ..
A quietness settled over the house today as husband and children returned to school.
Well, at least for an hour until the school called and said my middle daughter (non-celiac) was sick. Suspicious stomach aches have been plaguing her this last month or so . . ..
Anyway, while she is watching a movie thought I'd pass a long a family favorite.
If you are gluten free and have not tried hummus then today is the day.
It is naturally casein free,
good for you,
filling,wonderful as a dip or spread on a corn tortilla for lunch,
easy to make and
will impress your friends.
Hummus
o 2 cups canned chickpeas, drained
o 1 1/2 t kosher salt (we really like kosher salt, but I am sure regular would work fine)
o 4 minced garlic cloves
o 1/3 cup tahini (this is either located in Asian part of the grocery store or with the peanut butters. Joyva in a brown and orange can is gf.)
o 6 T lemon juice (sure fresh would be nice, but I just use the kind out of the bottle)
o 3 T olive oil
o a dash of hot sauce (we love Thai Kitchen Spicy Thai Chili which is gf. we use it whenever we want to put a little spice into something.)
Put everything (start with a smaller amount of hot sauce and add to your families tolerance level) in a food processor and process until you reach a coarse puree. Add more olive oil to make it thinner if you like. Serve with Tostitos.
